🍓 Strawberry hibiscus macarons 🍓

It's been a while since I've written about baking macarons. Well there is a reason, it's been a while, since I have baked macarons. Life can interfere with our hobbies and passions, but it's important to take time to enjoy doing things that bring you joy and happiness. Baking macarons for friends and family brings me joy and happiness, so here's to baking more macarons.

Strawberry hibiscus macarons, why this flavor combination? I wanted to make another strawberry macaron but with a different twist. I saw a strawberry and hibiscus flavored jam in the Dean and Deluca catalog which looked intriguing. The jam is made by a Brins, small company specializing in flavorful spicy jams and marmalades. Strawberry is a sweet red fruit that tastes like the essence of spring. Hibiscus has a tart, lemony taste which balances the strawberries sweetness. The perfect flavor combination for my next macaron.

The strawberry hibiscus jam was added to Italian meringue buttercream for the filling.
