Macarons can be baked to celebrate life's joyful events, but also to remember those whose life has been cut too short. Life can be very brief. Those we love can be taken in a heartbeat. When this happens we gather together and gain strength from each other. Reassurance that those who died might not be here on earth with us, but they will continue to live on in our hearts. I recently made macarons to share at a life celebration, a life that ended too soon.

Strawberry champagne macarons are the perfect flavor for any celebration. Strawberries and champagne have a long history of pairing together. They conjure images of relaxed days spent enjoying friendship and the moment. So, raise a strawberry champagne macaron to the heavens to toast the ones, who have left this earth too soon.
The macaron shells and buttercream are made, using the Italian meringue method, previously described in the blog post Macarons for a Wedding. The recipe is adapted from the Bouchon Bakery Cookbook. The macaron shells were flavored with Heilala pure vanilla powder and topped with Fancy Sprinkles. The buttercream is flavored with Fortnum and Mason's strawberry & champagne preserve.
When someone close to you dies, memories can fade with time, but their spirit lives on in your heart. That is something worth celebrating.
