The chocolate pecan cookie recipe was next my 'The Secret Recipes' baking challenge. Dominique Ansel described it as being "utterly addictive", and I totally agree. Eaten warm it is pure chocolate delight. A crispy edge with a soft smooth center, it's like fudge pie in a cookie. How can you eat just one?
Start with the best ingredients. I used Guittard semi sweet chocolate chips.
The majority of the chips were melted over a double boiler. The remainder was set aside to use later in the recipe.
Granulated sugar, cornstarch, baking powder, and salt are combined in a large bowl. Then eggs are whisked into the dry ingredients.
The chocolate-butter mixture is slowly whisked into the dry ingredient-egg batter.
Chopped pecans and the remainder of the chocolate chips are folded into the mixture.
The cookie dough is poured into a shallow dish, covered with Saran Wrap, and placed in the refrigerator overnight to rest.
The rested dough is rolled into balls, placed on parchment paper, pressed down with your palm, and placed in the oven.
The resulting cookie is true chocolate delight, as close to perfection as it gets.
