Key lime pie macarons, sounds like a Jimmy Buffet song - light, fun, not to be taken too seriously. A party in your mouth! A clean tart taste, refreshing as a sea breeze blowing in over the ocean waves. A fun fresh take on a classic Key West pie, fun beach vibes wrapped up in a macaron.

Key lime curd flavored the Italian buttercream and was used for a bullseye in the center of the macaron. I added extra key lime zest to enhance the flavor of the buttercream. The extra zest gave a tart balance to the sweetness of the macaron.

Next, marionmacarons made the macaron shells using the basic macaron recipe found in the Bouchon Bakery Cookbook and described in a previous post, Macarons for a Wedding. The macaron shell was flavored with a tablespoon of vanilla paste.

The baked macaron shells were paired together. The key lime curd flavored Italian buttercream was piped in a circle, and the bullseye was filled with key lime curd.

The edge of the macarons were rolled in a bed of crushed graham crackers. A beach party in your mouth!
