Macarons to Beat the Heat


Blueberry Lemon Macarons

Summer is here and, in the deep south, the heat and humidity is suffocating. MarionMacarons needs relief, so I created a macaron that can beat the heat.

I began by thinking of the two flavors that remind me of summer, lemons, and blueberries. Lemons are refreshing when added to any dish, giving it a slightly sour tartness. Think lemonade, lemon tarts, lemon water, lemon anything. Blueberries are in season now and give a burst of berry flavored sweetness to many dishes. I love to eat them by the handfuls, pile them on my morning cereal, add them to salads, pancakes, almost anything. One of my sister-in-laws makes the best blueberry jelly and keeps us in constant supply. So, I combined these flavors to make a blueberry lemon macaron.

First, I made the macaron shells using the basic macaron recipe found in the Bouchon Bakery Cookbook and described in a previous post, Macarons for a Wedding. The shells were given the bright yellow color with lemon yellow food color powder from L'Epicure. This coloring is very intense, only adding one-eighth of a teaspoon to the Italian meringue. The macaron shells were flavored with lemon zest.

Next, I made blueberry Italian buttercream for the filling. Blueberries were added to the blueberry jelly and slowly cooked down to remove moisture and to intensify the blueberry flavor. This gel was added to the basic Italian meringue buttercream recipe found in the Bouchon Bakery Cookbook.

A bullseye of lemon cream with its tart, tangy taste was used to balance the sweetness of the blueberry buttercream. Lemon cream was made using the recipe found in Laduree's Macaron the Recipes cookbook.
