Kaitlyn is a partner in my medical practice and, more importantly, a friend. She is having a baby soon, and I offered to make macarons for the office baby shower. Macarons can be any color from pink to blue and any flavor the mom-to-be desires. Kaitlyn is not a girly-girl and chose matcha macarons with dark chocolate ganache filling.

The dark chocolate ganache for the macaron filling was made using the recipe in Dominique Ansel's cookbook 'The Secret Recipes.' It's simple and delicious, allows the dark chocolate flavor to shine and has a very smooth texture.
Chop the dark chocolate and place it in a heat proof bowl. I used Valhrona Guanaja 70% cacao.
Bring heavy cream to a boil and pour over the chocolate.
Whisk the chocolate and cream, add butter, and continue to whisk until smooth. Cover with plastic wrap and refrigerate to set.
The macaron shells were made using the Italian meringue method found in the Bouchon Bakery cookbook. This technique was described in a previous blog post, Macarons for a Wedding. To give the macarons the matcha flavor, I added 3 tsp. of matcha powder to the almond flour/confectioner sugar mixture. Then proceeded to make the macaronage.
