Cooper was a Jack Russell Terrier who lived a good, long life of fifteen years. After a short illness he died last summer. He was given to one of my sons by dear friends after his first Jack Russell died. As life events happen, I “adopted” Cooper and he became my dog.
Cooper forest bathing in Bailey’s Woods
We enjoyed taking long walks in Bailey’s Woods, part of William Faulkner’s estate at Rowan Oak. He enjoyed Shinrin-yoku as much as I did. Shinrin-yoku is the name given to the Japanese art of “forest bathing,” which are contemplative walks through the woods that reconnect the individual with nature and can lead to decreased stress, natural mood elevation and even a stronger immune system.

In Cooper’s memory, I made an espresso chocolate macaron. I added instant espresso powder and dark brown food jell to half of the macaronage for the shell. The other half of the macaronage was colored with a lighter brown food jell. Each macaronage was placed in separate pastry bags, they were placed side by side inside of a larger bag and then piped resulting in the pattern that resembled Cooper’s colors. The filling was a dark chocolate ganache.

Cooper was a good dog! He is missed.
